Coconut, kiwi & lime chia pudding recipe with ABC nut butter - Vegan
This coconut, kiwi & lime chia pudding recipe featuring our ABC nut butter is a delicious, highly nutritious breakfast recipe with killer flavours that tastes so spectacular you will forget it's healthy.
For the chia pudding:
40g chia seeds
½ tsp vanilla extract
½ tsp lime zest
250ml coconut milk
For the kiwi smoothie:
1 ripe banana
2 ripe kiwis
1 tsp spirulina
125ml oat milk (or milk of choice)
Juice of ½ lime
Toppings (per pot):
⅔ tbsp Butter Nut of London ABC (almond, brazil nut, cashew) nut butter
To make the chia pudding, place the chia seeds, vanilla and lime zest in bowl. Pour over the coconut milk and stir until combined. Chill in the fridge for 30 mins.
Place the smoothie ingredients in a blender and blend on high until smooth.
For a bit of decoration, arrange slices of kiwi around the edges of four jars.
Add the first layer of chia pudding to the jars. Cover with half of the smoothie, the remaining chia pudding and a dollop of ABC nut butter. Top with the remaining smoothie and more ABC nut butter.
Dot on some blueberries, sprinkle with granola, et voila!
